Barbecue Chicken and Beans

3 (6-ounce) boneless, skinless chicken breasts, cut into 1" pieces

1 (15-ounce) can red kidney beans, drained and rinsed

2 teaspoons gluten-free Worcestershire sauce

1 cup gluten-free homemade (see recipe in sidebar) or store-bought barbecue sauce

2 cups cooked white rice

1. Add all ingredients except rice to a greased 2.5-quart or larger slow cooker.

2. Cook on high for 4 hours or on low for 8 hours. Serve over rice.

Slow Cooker Suggestions

To make your own barbecue sauce, mix together 1 cup gluten-free ketchup, 1/4 cup apple cider vinegar, 2 tablespoons brown sugar or molasses, 1 tablespoon Dijon mustard, 1 tablespoon water, 1/2 teaspoon salt, and 1/2 teaspoon ground black pepper. Cook over medium heat for 3–5 minutes and let cool. Use as you would any barbecue sauce. Store in an airtight container or a washed, recycled plastic bottle in the refrigerator for up to 1 month.
